Ingredients
fish (bone-in 2 in. pieces of any white fish)
salt
cooking oil
soy sauce
salt
sliced ginger
Steps
First, prepare the fish by descaling and chopping into small 2-3 in. segments.
Mix in a thin layer of salt.
Heat oil in a wok. You can also use a flat frying pan.
One by one, add the fish to fry.
Make sure the fish lies flat so you can sear the entire side.
When one side is cooked to a golden brown, carefully flip over the fish to fry the other side.
After both sides are golden brown, then the fish probably done cooking. You can definitively check by seeing if the fish meat easily lifts off the bone. Remove the fish from the wok.
Now we are going to re-fry them in less oil to prepare the flavoring.
Start by adding a few slices of ginger.
Add in a dash of soy sauce.
Then add in a little salt.
Finally add a little water.
Carefully mix it all together without breaking apart the fish.
Then, take the fish out of the wok and it's ready to serve!
